Ingredients

125g wholemeal flour
25g wheat bran
50g ground flaxseeds or linseeds
4tbsp sugar substitute
2tsp ground cinnamon
1tsp ground ginger
1/2 tsp bicarb of soda
2tsp baking powder
1/4 tsp fine sea salt

2 eggs
250ml buttermilk
4tbsp vegetable oil
1tsp vanilla extract
1 large carrot, finely grated
75g sultanas
40g pecans, chopped (I used walnuts)

1. Preheat oven to Gas Mark 5. Line a 12 hole deep muffin tin with muffin paper cases or grease well. I used silicone cases instead and squirted a bit of low fat spray inside!

2. In a large bowl, combine the flour, bran, flaxseed or linseed, sugar substitute, cinnamon, ginger, bicarb, baking powder and salt. In a small bowl, whisk together the eggs, buttermilk, oil and vanilla. Stir in the carrots, sultanas and pecans/walnuts. Add to the flour mixture and stir until just combined.

3. Spoon into the tin/cases and bake for 20-25 mins or until a tester inserted in the centre of a muffin comes out clean.
